Hey, I know this isn't as cool, fabulous, or exciting as adorable kids or new scooters, but I had to pass along a really fabulous, EASY recipe I tried last night. Kevin got me a subscription to Cooking Light, which has to be the greatest magazine IN THE WORLD, and they had this meal in the December 2006 issue. They were so good! And you can find coconut milk on the Asian foods aisle, although I didn't find light, so I just made it with regular. These pancakes are so tasty that they totally work for a speedy midweek dinner--they don't even really need syrup!

Double Coconut Pancakes
These pancakes cook to a light brown color.
1 1/2 cups all-purpose flour (about 6 3/4 ounces)
2 tablespoons sugar
2 tablespoons flaked sweetened coconut
1 teaspoon baking powder
1/2 teaspoon salt
1 (13.5-ounce) can light coconut milk
1 tablespoon butter, melted
1 large egg, lightly beaten
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl. Combine coconut milk, butter, and egg; stir well. Add coconut milk mixture to flour mixture, stirring until smooth.
Pour about 1/4 cup batter per pancake onto a hot nonstick griddle or nonstick skillet. Cook 3 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 2 minutes or until bottoms are lightly browned.
Yield: 4 servings (serving size: 3 pancakes)

P.S. You can also get all the Cooking Light recipes ever printed on their website at www.cookinglight.com. I go there at least 1-2 times a week! I love searching by "ingredient" because sometimes I have something extra I need to use up, and I've never tried a Cooking Light dish I didn't like.
